- 1 (15-ounce) can black beans — rinsed and drained
- 1 large ripe avocado — mashed
- ½ cup frozen or canned corn — thawed or drained
- ¼ cup finely chopped red onion
- ¼ cup fresh cilantro — chopped
- 1 tablespoon fresh lime juice
- ½ teaspoon ground cumin
- ¼ teaspoon chili powder (adjust to taste)
- Salt and freshly ground black pepper — to taste
- 4 large (10-inch) flour tortillas — warmed
Instructions
- In a medium bowl, scoop and mash the avocado with a fork until you reach your desired texture. Stir in the lime juice immediately.
- Add the rinsed black beans, thawed corn, finely chopped red onion, and chopped cilantro to the mashed avocado.
- Sprinkle in the cumin, chili powder, salt, and black pepper. Fold everything together gently.
- Sample the filling and adjust lime juice, chili powder, or salt as needed.
- Warm tortillas in a dry skillet or microwave to make them pliable.
- Lay a warm tortilla flat, spoon about one-quarter of the filling into the center, and roll it tightly. Repeat for remaining tortillas.
- Enjoy immediately while warm, slicing on the diagonal if desired.
