Quick and flavorful vegan burrito wraps filled with black beans, avocado, corn, and fresh cilantro.

- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado
- ½ cup Frozen or Canned Corn, thawed or drained
- ¼ cup finely chopped Red Onion
- ¼ cup fresh Cilantro, chopped
- 1 tablespoon Lime Juice
- ½ teaspoon Cumin Powder
- ¼ teaspoon Chili Powder
- Salt and Black Pepper, to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- Halve and scoop the avocado into a medium mixing bowl. Mash with a fork to your desired consistency, add lime juice, and stir.
- Add the black beans, corn, red onion, and cilantro to the bowl.
- Sprinkle the cumin, chili powder, salt, and black pepper over the mixture and gently fold everything together.
- Warm the tortillas as recommended.
- Lay a warm tortilla flat, spoon roughly one-quarter of the filling down the center, and roll up tightly.
- Repeat for remaining tortillas and serve immediately.
Notes
For best results, keep filling and tortillas separate until serving to avoid sogginess. Feel free to customize with additional ingredients like lettuce or proteins.
