Description
A warm and rich hot chocolate made with dark chocolate and less sugar, perfect for cold nights and a cozy treat.
Ingredients

- 2 cups milk or plant milk (almond, oat, or soy)
- 2 tablespoons unsweetened cocoa powder
- 2 ounces dark chocolate (60–70% cocoa), chopped
- 1 to 2 tablespoons maple syrup or honey (to taste)
- 1/4 teaspoon vanilla extract
- Pinch of salt
- Optional: 1/4 teaspoon ground cinnamon or a tiny pinch of chili for spice
- Optional thickener: 1/2 teaspoon cornstarch mixed with 1 tablespoon cold milk (if you want thicker)
Instructions
- Put milk in a small pot. Warm it over low to medium heat. Do not boil.
- Whisk in cocoa powder and salt until smooth.
- Add the chopped dark chocolate. Stir until the chocolate melts.
- If using cornstarch, mix it with cold milk first, then add to the warm pot and stir for 1 minute to thicken.
- Add maple syrup or honey a little at a time, tasting and adjusting sweetness as desired.
- Remove from heat. Stir in vanilla and cinnamon or chili if using.
- Pour into cups and serve right away.
Notes
For extra richness, warm your mugs first. If it separates while storing, reheat slowly and whisk or blend for a smooth finish.
