Instructions

  1. In a large bowl, combine the drained chickpeas, halved cherry tomatoes, diced cucumbers, chopped red onion, and crumbled feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the dressing.
  3. Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  4. Fold in the chopped parsley.
  5. Serve immediately or let it chill in the fridge for 30 minutes to enhance the flavors.
