Ingredients

  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in the minced garlic, cumin, and smoked paprika, cooking for an additional minute until fragrant.
  3. Add the rinsed lentils, diced tomatoes, and vegetable broth. Bring the mixture to a boil.
  4. Reduce heat to low, cover, and let simmer for about 30-35 minutes until the lentils are tender.
  5. Season with salt and pepper to taste. If the stew is too thick, feel free to add more broth or water until desired consistency is reached.
  6. Serve hot, garnished with fresh parsley as desired.
