- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery; sauté for about 5 minutes until softened.
- Stir in the minced garlic, cumin, and smoked paprika, cooking for an additional minute until fragrant.
- Add the rinsed lentils, diced tomatoes, and vegetable broth. Bring the mixture to a boil.
- Reduce heat to low, cover, and let simmer for about 30-35 minutes until the lentils are tender.
- Season with salt and pepper to taste. If the stew is too thick, feel free to add more broth or water until desired consistency is reached.
- Serve hot, garnished with fresh parsley as desired.
