Warm, melty baked brie cheese topped with honey, toasted pecans, and sweet cranberries for a comforting and elegant appetizer.

- 1 (8-ounce / 225–240 g) wheel of brie cheese
- 2 tablespoons honey, plus extra for drizzling
- 1/3 cup (about 35 g) chopped pecans, toasted
- 2 tablespoons dried cranberries, roughly chopped
- 1 teaspoon fresh rosemary, finely chopped (optional)
- Freshly cracked black pepper, to taste
- Crackers, toasted baguette slices, or apple slices for serving
Instructions
- Preheat the oven to 350°F (175°C). If using puff pastry, preheat to 375°F (190°C) instead. Line a small baking sheet with parchment paper.
- Toast the pecans: place them on the sheet and bake for 5–6 minutes until aromatic and slightly darker. Remove and chop roughly.
- If using puff pastry: roll the pastry sheet thinly, place the brie in the center, spoon honey, pecans, cranberries, and rosemary on top of the brie, fold pastry edges over to seal, brush with egg wash, sprinkle brown sugar if desired, and bake for 20–25 minutes until golden brown.
- For the simple baked brie: place the whole wheel of brie on the prepared sheet. Score a shallow cross or remove the top rind (optional). Spoon honey over the top, scatter the toasted pecans and dried cranberries, and sprinkle rosemary and black pepper.
- Bake for 12–15 minutes, or until the brie is soft and slightly jiggly but not completely collapsed.
- Remove from oven and let rest for 3–5 minutes. Drizzle a little extra honey if desired. Serve warm with crackers, toasted baguette, or apple slices.
Notes
Don’t over-bake the brie; check at 12 minutes. You can also serve with gluten-free options or add variations like bacon or figs.
