Description
Fresh and vibrant Caprese skewers made with cherry tomatoes, mozzarella, and basil, drizzled with olive oil and balsamic reduction.
Ingredients

- 16 cherry tomatoes (about 10–12 oz / 280–340 g)
- 8 oz fresh mozzarella (bocconcini), drained and patted dry
- 16 fresh basil leaves (large enough to fold, or 32 small leaves)
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic reduction or glaze
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 16 small wooden skewers or toothpicks
Instructions
- Prep ingredients: Drain mozzarella well and pat dry with paper towels. Rinse and dry cherry tomatoes. Wash and dry basil.
- Assemble skewers: On each skewer, thread one cherry tomato, one basil leaf (fold if large), and one mozzarella ball. Repeat for longer skewers.
- Arrange on platter: Lay assembled skewers on a serving plate.
- Dress and season: Drizzle olive oil and balsamic reduction over the skewers. Sprinkle with sea salt and black pepper.
- Serve immediately: Best served at cool room temperature or slightly chilled.
Notes
For a dairy-free version, use vegan mozzarella or marinated tofu. Make a balsamic reduction by simmering balsamic vinegar and honey.
