Almond Tiramisu Roll Cake


Description

A delightful swirl of cake infused with layers of rich coffee cream and adorned with the delicate crunch of sliced almonds, this Almond Tiramisu Roll Cake combines traditional tiramisu flavors in a soft roll.


Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/4 cup coffee, cooled
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting
  • Sliced almonds for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet (approximately 15×10 inches) with parchment paper.
  2. In a large mixing bowl, beat the eggs and granulated sugar together until thick and pale, about 5 minutes.
  3. Sift together the all-purpose and almond flour, along with the baking powder. Gently fold this mixture into the egg mixture, being careful not to overmix.
  4. Spread the batter evenly onto the prepared baking sheet and bake for 12-15 minutes, or until the cake springs back when lightly touched.
  5. Once done, remove from the oven and let it cool slightly. While still warm, roll the cake in the parchment paper to form a log. Allow it to cool completely.
  6. In another bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Unroll the cooled cake, brush generously with cooled coffee, and spread the mascarpone mixture evenly over the top.
  8. Carefully roll the cake back into a log shape, wrap it in plastic wrap, and refrigerate for at least 2 hours to set.
  9. Before serving, dust with cocoa powder and sprinkle with sliced almonds for an elegant finish.

Notes

For a gluten-free version, substitute regular flour with gluten-free all-purpose flour. You can also add a splash of almond extract for extra almond flavor.
