- 1 pound ground beef
- 1 onion, chopped
- 2 cups mushrooms, sliced
- 1 can cream of mushroom soup (condensed)
- 1 cup milk
- 2 cups frozen mixed vegetables
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups cooked rice or mashed potatoes (for serving)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and mushrooms to the skillet and cook until tender, about 4–6 minutes.
- Stir in the cream of mushroom soup, milk, garlic powder, salt, and pepper, mixing well.
- Fold in the frozen mixed vegetables until well combined.
- Transfer the mixture to a greased baking dish.
- Bake in the preheated oven for 25-30 minutes until heated through and bubbly.
- Serve hot over rice or mashed potatoes.
Notes
This dish can be made ahead and refrigerated before baking. It also reheats beautifully. For a lighter option, serve with a green salad.
