Andy’s Homemade Mexican Rice


Description

Delicious Mexican rice simmered in a flavorful broth, perfect for family dinners or festive gatherings.


Ingredients

  • 2 cups long grain white rice
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 4 cups water
  • 2 tablespoons tomato paste
  • 1 tablespoon Knorr Chicken Bouillon Powder

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add 1 tablespoon of minced garlic and sauté for 3 minutes until fragrant.
  3. Add the rinsed rice to the skillet, stirring to coat in the garlic and butter. Cook the rice, stirring frequently, until lightly golden, about 10 minutes.
  4. Whisk together the water, tomato paste, and chicken bouillon powder in a bowl until well combined.
  5. Once the rice is toasted, pour the broth mixture into the skillet. Bring it to a boil and stir well, ensuring the rice is evenly distributed.
  6. Reduce to a simmer, cover, and cook for 25-30 minutes, or until the liquid is absorbed and the rice is tender.
  7. Once done, fluff the rice with a fork and serve it warm, garnishing with fresh cilantro if desired.

Notes

For added flavor, consider substituting water with chicken or vegetable broth.
