- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup unsalted butter, softened
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 4 cups apples, peeled and diced
- 1 tablespoon lemon juice
- 1/2 cup rolled oats
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a baking dish.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the lemon juice.
- In another bowl, mix the flour, baking powder, cinnamon, and salt. Gradually add this mixture to the butter mixture, mixing until just combined.
- Fold in the diced apples and rolled oats gently to keep the batter light.
- Spread the mixture evenly in the prepared baking dish.
- Bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let cool before cutting into bars.
Notes
Best served warm with butter or ice cream. Store in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
