Asian Sweet Ginger Beef Stir Fry

Ingredients

  • 1 lb (450g) lean beef (flank steak or sirloin), thinly sliced against the grain
  • 2 tablespoons vegetable oil (or sesame oil)
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium carrot, julienned or sliced into thin strips
  • 1 zucchini, sliced
  • 1 cup snap peas or green beans, trimmed
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • Salt and pepper, to taste
  • 3 tablespoons soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • 1/2 teaspoon chili flakes (optional)
  • Chopped green onions (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Thinly slice the beef against the grain. Slice the onion, bell peppers, carrot, and zucchini. Set aside snap peas or green beans.
  2. In a small bowl, mix soy sauce, honey (or brown sugar), rice vinegar, sesame oil, cornstarch, and water, then whisk until combined. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef and season with salt and pepper. Sear until browned and cooked through, about 3-4 minutes. Remove beef from the skillet and set aside.
  4. In the same skillet, add another tablespoon of oil. Stir in the onion, bell peppers, carrot, zucchini, snap peas (or green beans), garlic, and ginger. Stir-fry until the vegetables are tender yet crisp, about 5 minutes.
  5. Return the beef to the skillet. Pour the sauce over the mixture, stirring well to ensure everything is coated. Cook for an additional 2 minutes until the sauce thickens slightly.
  6. Remove from heat, and garnish with chopped green onions and toasted sesame seeds. Serve hot over rice or noodles.

Notes

For extra crunch, consider adding water chestnuts or broccoli to the stir fry.
