- 2 cups apple cider
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsweetened applesauce
- 2 large eggs
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a donut pan.
- Simmer the apple cider over medium heat until reduced to about 1 cup and allow it to cool.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, combine the reduced apple cider, applesauce, eggs, vegetable oil, and vanilla extract. Mix well until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined without overmixing.
- Fill each donut mold about 2/3 full with the batter.
- Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack.
- Optionally, dust with powdered sugar or cinnamon sugar before serving.
Notes
For added flavor, consider using Granny Smith or Honeycrisp apples for the cider. Serve warm with butter or toasted with honey.
