  • 1/2 cup Parmesan Cheese

  • 1 teaspoon Paprika

  • 1 cup Bell Peppers
  • 1 cup Spinach
  • 1/2 cup Sun-Dried Tomatoes

Instructions

  1. Preheat oven to 375°F (190°C) and grease a medium baking dish.
  2. Chop bell peppers, roughly chop spinach, and drain sun-dried tomatoes.
  3. In a bowl, combine cottage cheese, eggs, and Parmesan, whisk gently.
  4. Add chives, garlic powder, paprika, salt, and pepper. Mix in bell peppers, spinach, and sun-dried tomatoes.
  5. Pour mixture into baking dish and smooth the top.
  6. Bake for 18-22 minutes until edges are set and center is slightly firm. Broil for 1-2 minutes for a golden top.
  7. Let rest for 3-5 minutes before slicing. Garnish with extra chives if desired.
