Description

Warm, cheesy shrimp piled onto crisp, golden bread, this Baked Shrimp Toast is perfect for gatherings, brunches, or a cozy snack. It’s fast to prepare and scales easily for larger servings.


Ingredients

  • 1 small French baguette, cut into 1/2 inch thick slices
  • 1 tablespoon olive oil
  • 1 lb shrimp, peeled, deveined, and minced
  • 1/2 small onion, finely chopped
  • 1 stalk celery, finely chopped
  • 3 cloves garlic, minced
  • 1/4 to 1/2 teaspoon Cajun seasoning
  • 1/4 teaspoon fresh cracked black pepper
  • 4 ounces cream cheese, cut into small cubes
  • 1/4 cup shaved Parmesan cheese
  • 1/4 cup shaved Fontina cheese
  • Kosher salt and fresh ground black pepper, to taste
  • 1/4 teaspoon crushed red pepper
  • 1 green onion, thinly sliced

Instructions

  1. Preheat the broiler on low. Arrange the baguette slices in a single layer on a baking sheet and broil for 3–5 minutes until lightly browned. Flip and broil the other side.
  2. In a skillet, heat olive oil over medium heat. Add minced shrimp, onion, and celery, cooking for about 1 minute.
  3. Add minced garlic, Cajun seasoning, and black pepper. Cook for another minute, stirring constantly.
  4. Reduce heat to very low, add cream cheese, Parmesan, and Fontina, stirring until well blended and melted.
  5. Top each toasted baguette slice with a spoonful of the shrimp-cheese mixture and sprinkle with crushed red pepper.
  6. Place the topped slices in a preheated 400°F (200°C) oven for about 10 minutes until the topping is browned and bubbly.
  7. Remove from the oven, garnish with green onions, and serve immediately.

Notes
