  • 1 teaspoon vanilla extract
  • 1/4 cup honey or maple syrup
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish (an 8×8 inch pan works great).
  2. In a mixing bowl, combine the mashed bananas, rolled oats, baking powder, cinnamon, and salt until well mixed.
  3. In another bowl, whisk together the milk, egg (or flaxseed mixture), vanilla extract, and honey or maple syrup until fully combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix; a few lumps are okay.
  5. Transfer the mixture into the greased baking dish, smoothing the top with a spatula.
  6. Optionally, sprinkle the chopped nuts or chocolate chips over the top for added flavor and texture.
  7. Bake for 30-35 minutes or until the top is golden brown and the oatmeal is set in the center. You can test doneness by inserting a toothpick; it should come out clean.
  8. Allow the bake to cool slightly before serving.

Notes

For best flavor, use ripe bananas and avoid overmixing the batter for a lighter texture.
