Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish (an 8×8 inch pan works great).
- In a mixing bowl, combine the mashed bananas, rolled oats, baking powder, cinnamon, and salt until well mixed.
- In another bowl, whisk together the milk, egg (or flaxseed mixture), vanilla extract, and honey or maple syrup until fully combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix; a few lumps are okay.
- Transfer the mixture into the greased baking dish, smoothing the top with a spatula.
- Optionally, sprinkle the chopped nuts or chocolate chips over the top for added flavor and texture.
- Bake for 30-35 minutes or until the top is golden brown and the oatmeal is set in the center. You can test doneness by inserting a toothpick; it should come out clean.
- Allow the bake to cool slightly before serving.
