- 3 ripe bananas, mashed (about 1 to 1 1/4 cups)
- 1/3 cup coconut oil, melted (about 78–80 ml)
- 1/2 cup coconut sugar (about 100 g)
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour (about 180 g)
- Optional: 1/2 cup chopped walnuts or pecans
- Optional: 1/2 cup dark chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a large mixing bowl, mash the ripe bananas until mostly smooth.
- Stir in the melted coconut oil and coconut sugar until combined.
- Add the eggs and vanilla; whisk until homogenous.
- Sprinkle the baking soda and salt over the wet mixture and stir.
- Add the flour and fold gently until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, until the top is golden and a toothpick comes out with a few moist crumbs.
- Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
