  • 3 ripe bananas, mashed (about 1 to 1 1/4 cups)
  • 1/3 cup coconut oil, melted (about 7880 ml)
  • 1/2 cup coconut sugar (about 100 g)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour (about 180 g)
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until mostly smooth.
  3. Stir in the melted coconut oil and coconut sugar until combined.
  4. Add the eggs and vanilla; whisk until homogenous.
  5. Sprinkle the baking soda and salt over the wet mixture and stir.
  6. Add the flour and fold gently until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, until the top is golden and a toothpick comes out with a few moist crumbs.
  9. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
