Bang Bang Chicken Skewers

Ingredients

  • 1 pound chicken breast, cubed
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper to make the bang bang sauce. Taste and adjust heat or sweetness as desired.
  2. Thread the cubed chicken onto the soaked skewers, leaving a little space between pieces for even cooking. Season lightly with salt and pepper.
  3. Preheat the grill to medium-high heat. Oil the grates to help prevent sticking.
  4. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F (74°C) and has a nice char.
  5. Drizzle the bang bang sauce over the chicken skewers before serving, or serve it on the side for dipping.

Notes

Use Greek yogurt mixed with olive oil as a lighter swap for mayo. If using metal skewers, no soaking is needed; otherwise, soak wooden skewers for at least 30 minutes.
