Bang Bang Chicken Skewers


Description

Delicious skewers of marinated chicken coated in a creamy, slightly spicy bang bang sauce, perfect for gatherings and quick dinners.


Ingredients

  • 1 lb chicken breast, cubed (about 454 g)
  • 6 tablespoons mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 teaspoon sriracha (or to taste)
  • 2 tablespoons lime juice (fresh preferred)
  • Salt and pepper to taste
  • Skewers (wooden or metal)
  • Chopped green onions (for garnish)

Instructions

  1. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper to create the bang bang sauce. Taste and adjust sriracha or lime to preference.
  2. Toss the cubed chicken in half of the bang bang sauce and let marinate for 15 minutes (longer—up to 1 hour—if you have time).
  3. Preheat the grill to medium heat (around 375–400°F / 190–200°C). If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
  4. Thread the marinated chicken onto skewers, leaving a little space between pieces so heat circulates.
  5. Grill the skewers for about 10–12 minutes, turning occasionally, until the chicken is cooked through and has light char marks. Use an instant-read thermometer: chicken is done at 165°F (74°C) internal temperature.
  6. Serve the skewers drizzled with the remaining bang bang sauce and garnish with chopped green onions.

Notes

For juicier results, brine the cubed chicken briefly before marinating. Can substitute Greek yogurt for mayonnaise for a lighter version.
