Berry Cheesecake Fruit Salad

Description

A delightful blend of fresh berries folded into a creamy cheesecake mixture, perfect for a light dessert or a refreshing snack.

Ingredients

Scale
  • 1 cup mixed berries (strawberries, blueberries, raspberries), washed and hulled/sliced as needed
  • 1 cup cream cheese, softened (about 8 oz / 226 g)
  • 1 cup whipped cream or prepared whipped topping
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 cup graham cracker crumbs (optional; for cheesecake-like crunch)

Instructions

  1. In a large bowl, beat the cream cheese, sugar, vanilla extract, and lemon juice until smooth. Start at low speed, then increase to medium — scrape the bowl to avoid lumps.
  2. Gently fold in the whipped cream or whipped topping until well combined and fluffy. Don’t overmix; you want a light texture, not a dense paste.
  3. In another bowl, layer or toss the mixed berries (if using strawberries, slice them so pieces are similar in size).
  4. Pour the cream cheese mixture over the berries and gently mix until the berries are evenly coated.
  5. If desired, sprinkle graham cracker crumbs on top for a cheesecake-like crunch.
  6. Chill in the refrigerator for about 30 minutes before serving.

Notes

For a lighter version, use low-fat cream cheese and light whipped topping. Adjust sugar based on berry sweetness. Avoid overmixing to keep a light consistency.
