- 2 cups cooked chicken, shredded
- 1 can black beans, rinsed and drained
- 1 cup cooked rice
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 cup shredded cheese
- 4 large tortillas
- Sour cream and jalapeños for serving
Instructions
- In a large bowl, combine the shredded chicken, black beans, cooked rice, salsa, cumin, and garlic powder. Mix well.
- Lay the tortillas flat on a clean surface. Spoon an equal amount of the chicken mixture onto the center of each tortilla.
- Sprinkle shredded cheese over the chicken mixture.
- Fold in the sides of the tortilla and roll it up tightly from the bottom to encase the filling.
- Heat a skillet over medium heat and place the burritos seam-side down in the skillet. Cook until golden brown and heated through, about 3-4 minutes per side.
- Serve with sour cream and jalapeños on the side.
Notes
For added crunch, consider toasting the tortillas slightly before filling them.
