Black Bean Chicken Burritos

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, rinsed and drained
  • 1 cup cooked rice
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup shredded cheese
  • 4 large tortillas
  • Sour cream and jalapeños for serving

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, cooked rice, salsa, cumin, and garlic powder. Mix well.
  2. Lay the tortillas flat on a clean surface. Spoon an equal amount of the chicken mixture onto the center of each tortilla.
  3. Sprinkle shredded cheese over the chicken mixture.
  4. Fold in the sides of the tortilla and roll it up tightly from the bottom to encase the filling.
  5. Heat a skillet over medium heat and place the burritos seam-side down in the skillet. Cook until golden brown and heated through, about 3-4 minutes per side.
  6. Serve with sour cream and jalapeños on the side.

Notes

For added crunch, consider toasting the tortillas slightly before filling them.
