Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup cooked rice (brown or white)
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 avocado, sliced
  • 1 cup salsa
  • 4 large tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lettuce (optional)
  • Sour cream (optional)

Instructions

  1. In a large bowl, combine the black beans, cooked rice, corn, salsa, and shredded cheese. Season with salt and pepper to your liking.
  2. Lay out a tortilla on a clean surface and place a generous scoop of the mixture in the center. Top with avocado slices and lettuce if desired.
  3. Fold the sides of the tortilla inwards, then roll it up from the bottom to create a tightly packed wrap.
  4. Heat the olive oil in a skillet over medium heat.
  5. Place the wrap seam-side down into the skillet and cook until golden brown, about 3-4 minutes.
  6. Carefully flip the wrap and cook the other side until golden.
  7. Serve warm, with sour cream on the side for dipping.

Notes

Don’t overstuff your wraps! A generous scoop is perfect, but too much filling can make it hard to roll.
