- 1 can black beans, rinsed and drained
- 1 cup cooked rice (brown or white)
- 1 cup corn (canned or frozen)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 avocado, sliced
- 1 cup salsa
- 4 large tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lettuce (optional)
- Sour cream (optional)
Instructions
- In a large bowl, combine the black beans, cooked rice, corn, salsa, and shredded cheese. Season with salt and pepper to your liking.
- Lay out a tortilla on a clean surface and place a generous scoop of the mixture in the center. Top with avocado slices and lettuce if desired.
- Fold the sides of the tortilla inwards, then roll it up from the bottom to create a tightly packed wrap.
- Heat the olive oil in a skillet over medium heat.
- Place the wrap seam-side down into the skillet and cook until golden brown, about 3-4 minutes.
- Carefully flip the wrap and cook the other side until golden.
- Serve warm, with sour cream on the side for dipping.
Notes
Don’t overstuff your wraps! A generous scoop is perfect, but too much filling can make it hard to roll.
