Blackberry Cinnamon Swirl Oatmeal Muffins


Description

Warm and spiced oatmeal muffins filled with fresh blackberries, perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup milk (or plant-based milk)
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup sugar (or coconut sugar)
  • 1/2 cup unsweetened applesauce
  • 1/3 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup fresh or frozen blackberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. Mix the oats and milk in a large bowl and let it sit for 10 minutes to soften.
  3. In another bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. Add the wet ingredients (applesauce, oil, vanilla) and the soaked oats to the dry ingredients. Mix until just combined; be careful not to overmix.
  5. Gently fold in the blackberries, taking care not to crush them.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean when inserted into the center.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm with butter or honey for an extra touch. Store at room temperature for up to 3 days, or freeze for 3 months.
