- 1 pound ground beef
- 1 cup cooked white beans (canned or homemade)
- 1 cup butternut squash, cooked and mashed
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon olive oil
- Burger buns
- Toppings: lettuce, tomato, cheese, avocado, etc.
Instructions
- In a large bowl, combine the ground beef, white beans, mashed butternut squash, breadcrumbs, onion, garlic, salt, pepper, and paprika. Mix well until all ingredients are combined.
- Form the mixture into patties, about 1/2 inch thick. Make a small indentation in the center of each patty to prevent them from puffing up while cooking.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until browned and cooked through.
- Serve the burgers on buns with your favorite toppings, such as lettuce, tomato, and cheese.
Notes
For best flavor, use fresh butternut squash. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
