- 1 cup maple syrup
- 1 cup granulated sugar
- 1 cup light corn syrup
- ½ cup (1 stick, 113 g) unsalted butter
- 1 teaspoon baking soda
- 1 teaspoon pure vanilla extract
- 2 cups roasted peanuts (or preferred nuts such as pecans or almonds)
Instructions
- Grease a square baking dish (8×8 in.) with butter or line it with parchment paper.
- In a heavy-bottomed saucepan, combine maple syrup, granulated sugar, and corn syrup over medium heat. Stir until the sugar dissolves.
- Increase heat and bring the mixture to a rolling boil, avoiding stirring. Brush down sides with a wet pastry brush if needed.
- Boil until it reaches 300°F (hard crack stage), which takes about 10–15 minutes.
- Once at 300°F, remove from heat and stir in butter, baking soda, and vanilla extract.
- Fold in roasted peanuts until evenly coated.
- Pour the mixture into the prepared dish and spread it evenly with a greased spatula.
- Let it cool at room temperature for about an hour, then cut into squares or break into pieces.
Notes
Use a heavy-bottomed pot for even heat. Monitor the candy temperature carefully.
