Briam – Greek Oven-Baked Medley

Briam is a comforting Greek dish featuring a medley of roasted vegetables, perfect for any occasion.


Ingredients

  • 900 g potatoes, peeled and cut into 11.5 inch pieces
  • 2 medium zucchini, cut into similar-sized pieces
  • 1 large red onion, cut into wedges or bite-sized pieces
  • 1 can (14 oz) diced tomatoes
  • 1/3 cup extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon dried oregano
  • 1 teaspoon kosher salt (adjust to taste)
  • 1/2 teaspoon freshly ground black pepper
  • Optional: 1 red bell pepper, sliced
  • Optional: 1 small eggplant, cubed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the potatoes, zucchini, and red onions into bite-sized pieces.
  3. In a large bowl, combine the vegetables with olive oil, minced garlic, chopped parsley, and spices.
  4. Add the diced tomatoes and stir well.
  5. Transfer everything to a roasting pan and spread it out evenly.
  6. Roast in the oven for 30–40 minutes or until the vegetables are tender and caramelized, stirring occasionally.
  7. Serve hot as a main dish or as a side.

Notes

For variations, consider adding crumbled feta or a drizzle of lemon juice before serving. Store leftovers in an airtight container for up to 3–4 days.
