- 2 medium-sized eggplants (900 grams)
- 3 medium-sized zucchinis (625 grams)
- 2 medium-sized sweet red peppers (180 grams)
- 1 large green bell pepper (130 grams)
- 1 medium-sized red onion (140 grams)
- 4–5 large garlic cloves
- 2 large potatoes (550 grams)
- 3 medium-sized carrots (275 grams)
- 1 medium-sized ripe tomato (175 grams)
- A handful of fresh parsley, chopped (about 15 g)
- 1 teaspoon chopped fresh thyme (about 1 g)
- 1 teaspoon dried oregano (about 1 g)
- 1/4 cup tomato sauce (65 grams)
- 60 grams extra virgin olive oil
- 60 ml water
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 200°C / 392°F.
- Cut the eggplants into bite-sized pieces and place in a large mixing bowl.
- Cut the zucchinis into similar bite-sized pieces and add to the bowl.
- Chop the sweet red peppers and green pepper into bite-sized pieces; add to the bowl.
- Cut each garlic clove in half. Peel and cut the potatoes into slightly smaller pieces than the other vegetables; add to the bowl.
- Cut the red onion and tomato into smaller pieces. Peel and cut the carrots into thick slices; add onions, tomatoes, carrots, parsley, thyme, and oregano to the bowl.
- Add the tomato sauce and olive oil to the bowl. Season with salt and pepper; toss to coat well.
- Transfer the vegetables to a baking dish, spreading them evenly. Add water to the pan.
- Bake for about 30 minutes, then stir gently. Return to the oven, stirring every 15-20 minutes until vegetables are tender and caramelized (approximately 50-60 minutes total).
- Let the dish sit for 15 minutes before serving warm with crusty bread or feta on the side.
Notes
For a lower-calorie option, reduce olive oil or serve with feta for a non-vegan version.
