- 1 cup sliced mushrooms (button or shiitake)
- 1 medium onion, thinly sliced

- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (or a vegan alternative)
- 1 teaspoon sesame oil

Instructions
- Wash and cut the broccoli into bite-sized pieces. Slice the mushrooms and onion. Mince the garlic and ginger.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add in the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.
- Add the sliced onions to the pan and sauté until they become translucent, about 2-3 minutes.
- Toss in the sliced mushrooms, cooking for an additional 3-4 minutes until they soften.
- Add in the broccoli florets, stirring together for about 5-6 minutes until the broccoli is bright green but still crisp.
- Pour soy sauce and oyster sauce over the vegetables, stirring well to coat everything evenly.
- Drizzle sesame oil and stir for another minute, allowing the flavors to meld.
- Sample the stir fry and add salt and pepper according to your taste preference.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
For a spicy twist, add sliced bell peppers and a dash of sriracha. Ensure the skillet is hot before adding veggies to retain their crunch.
