Brown Sugar Pineapple Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. In a bowl, mix together brown sugar, soy sauce, garlic, and a little salt and pepper. Stir until the sugar dissolves into a syrupy glaze.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Add the chicken breasts and cook until browned, about 5–7 minutes per side.
  4. Pour the pineapple and brown sugar mixture over the chicken. Add the pineapple chunks and bring to a simmer.
  5. Cover and cook for another 10 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Serve hot, garnished with chopped green onions if desired.

Notes

For lower sodium, use low-sodium soy sauce or reduce the quantity. To decrease sweetness, consider using less brown sugar or adding acidic elements like lime juice.
