- 4 boneless skinless chicken thighs or breasts (about 1.5–2 lb total)
- 1/2 cup brown sugar (packed)
- 1 can (15 oz) pineapple chunks, with juice
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Lightly grease a medium baking dish or line with foil for easy cleanup.
- Season chicken on both sides with garlic powder, salt, and pepper.
- Place the chicken in the baking dish in a single layer.
- Pour the entire can of pineapple (chunks and juice) over the chicken, distributing chunks evenly.
- Sprinkle the brown sugar evenly over the pineapple and chicken.
- Drizzle 1 tablespoon soy sauce over the top.
- Bake uncovered for 30–35 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is slightly caramelized.
- If you want more caramelization, broil for 1–2 minutes at the end — watch closely to avoid burning.
- Spoon sauce and softened pineapple over each piece of chicken before serving.
Notes
For a gluten-free version, make sure to use gluten-free soy sauce. Optional ingredients such as smoked paprika or red pepper flakes can be added for extra flavor.
