  • 4 boneless skinless chicken thighs or breasts (about 1.52 lb total)
  • 1/2 cup brown sugar (packed)
  • 1 can (15 oz) pineapple chunks, with juice
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a medium baking dish or line with foil for easy cleanup.
  3. Season chicken on both sides with garlic powder, salt, and pepper.
  4. Place the chicken in the baking dish in a single layer.
  5. Pour the entire can of pineapple (chunks and juice) over the chicken, distributing chunks evenly.
  6. Sprinkle the brown sugar evenly over the pineapple and chicken.
  7. Drizzle 1 tablespoon soy sauce over the top.
  8. Bake uncovered for 30–35 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is slightly caramelized.
  9. If you want more caramelization, broil for 1–2 minutes at the end — watch closely to avoid burning.
  10. Spoon sauce and softened pineapple over each piece of chicken before serving.

Notes

For a gluten-free version, make sure to use gluten-free soy sauce. Optional ingredients such as smoked paprika or red pepper flakes can be added for extra flavor.
