A vibrant, spoonable twist on classic Italian bruschetta that combines herbed cheese with juicy tomatoes and fresh basil for a quick and elegant appetizer.

- 1 (6.5 oz / ~184 g) Alouette Cheese with herbs (or other soft cheese spread like Boursin)
- 1/2 cup tomatoes, chopped (about 1 medium tomato)
- 1/4 cup fresh basil, chopped
- 2 tablespoons balsamic vinaigrette glaze or balsamic reduction
- Pita chips, crackers, or thinly sliced baguette, for serving
Instructions
- Bring the herbed cheese to room temperature (about 15–20 minutes before assembling) so it’s easily spreadable and tastes brighter.
- Spread the soft cheese evenly over the center of a large plate or small platter, leaving about a 1/4 inch border around the edge.
- Evenly scatter and gently press the chopped tomatoes onto the surface of the cheese.
- Sprinkle the chopped basil over the tomatoes.
- Drizzle the balsamic glaze over the whole plate.
- Serve immediately with an assortment of pita chips, crackers, or thin slices of toasted baguette.
Notes
For a lower-sodium version, choose a low-sodium cream cheese-style spread and reduce or omit the balsamic glaze. To make it vegan, use a plant-based herbed spread and a maple-balsamic glaze.
