Description

Ingredients

  • ¼ cup fresh basil leaves, finely chopped

  • 1 tablespoon extra-virgin olive oil (for the tomato topping)
  • 12 teaspoons balsamic vinegar (adjust to taste)
  • Salt, to taste (start with ¼ teaspoon)
  • 8 oz feta cheese block, crumbled
  • ½ block cream cheese (4 oz), softened
  • ½ cup sour cream (or Greek yogurt for tangier version)
  • 1 garlic clove, minced (for the cheese mixture)
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon olive oil
  • Additional chopped basil leaves (for garnish)
  • Red pepper flakes (optional, to taste)
  • Freshly grated Parmesan cheese (optional, for sprinkling)

Instructions

  1. In a bowl, combine the diced tomatoes, basil, and minced garlic for the topping.
  2. Drizzle with olive oil and balsamic vinegar; stir to combine and adjust seasoning to taste.
  3. In a mixing bowl, combine crumbled feta, softened cream cheese, and sour cream (or Greek yogurt).
  4. Add minced garlic, lemon juice, and olive oil; blend until smooth but slightly textured.
  5. Adjust seasoning carefully as feta adds saltiness.
  6. Spoon the cheese mixture into a serving bowl and layer the marinated tomato mixture on top.
  7. Garnish with additional basil, olive oil, red pepper flakes, and Parmesan if desired.
  8. Chill for 10–15 minutes before serving for optimal flavor.

Notes

Use block feta for better texture. Drain tomatoes if very juicy to prevent a watery dip. Serve at room temperature for best flavor.
