Buffalo Cauliflower Steaks


Description

Roasted cauliflower steaks coated in a spicy buffalo glaze, served with a cool vegan ranch for a delightful contrast.


Ingredients

  • 1 head cauliflower
  • 1/2 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • For the vegan ranch:
    • 1/2 cup raw cashews, soaked
    • 1 tablespoon lemon juice
    • 1 tablespoon apple cider vinegar
    • 1 teaspoon dried dill
    • Salt to taste
    • Water to thin (start with 2–4 tablespoons)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into thick steaks.
  3. In a bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. Brush the mixture on both sides of the cauliflower steaks.
  5. Place the steaks on a baking sheet and bake for 20 minutes.
  6. After 20 minutes, remove from the oven, brush with buffalo sauce, and return to the oven for another 10 minutes.
  7. For the vegan ranch, blend soaked cashews, lemon juice, apple cider vinegar, dried dill, salt, and add water to achieve desired consistency.
  8. Serve the cauliflower steaks drizzled with the vegan ranch.

Notes

Soak cashews for at least 2 hours for a silky ranch. Use parchment paper to prevent sticking.
