  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)
  • 1 teaspoon vanilla extract
  • Cream cheese frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
  3. In another bowl, beat the eggs and mix in the vegetable oil, grated carrots, crushed pineapple, walnuts (if using), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredient mixture and stir until just combined. Be careful not to overmix.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  8. Once cooled, frost both layers with cream cheese frosting and decorate as desired.

Notes

Use fresh, moist carrots and avoid over-mixing for best results. This cake pairs beautifully with coffee or tea.
