- 1 cup crushed pineapple, drained

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
- In another bowl, beat the eggs and mix in the vegetable oil, grated carrots, crushed pineapple, walnuts (if using), and vanilla extract.
- Pour the wet ingredients into the dry ingredient mixture and stir until just combined. Be careful not to overmix.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
- Once cooled, frost both layers with cream cheese frosting and decorate as desired.
