Buttermilk Banana Bread

  • 3 ripe bananas, mashed
  • 1/2 cup buttermilk
  • 1/3 cup melted butter (about 75 g)
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 1 egg, beaten
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, combine the mashed bananas, buttermilk, melted butter, and vanilla extract.
  3. Stir in the sugar and beaten egg until well blended.
  4. In another bowl, whisk together the baking soda, salt, and flour.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor. If the top browns too quickly, tent with foil during baking.
