Ingredients

  • 8 oz pasta (penne works best)
  • 1 lb chicken breast, sliced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup bell peppers, sliced
  • 1 cup onion, sliced
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Boil water in a large pot, add salt, and cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced chicken and sprinkle with Cajun seasoning. Cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  3. In the same skillet, add bell peppers and onion. Sauté until softened, about 4-5 minutes.
  4. Slowly stir in heavy cream, then return chicken to skillet and mix thoroughly.
  5. Toss in the cooked pasta and stir until well-coated in the creamy sauce.
  6. Taste and season with salt and pepper as necessary.
  7. Plate the pasta and garnish with Parmesan cheese on top.

Notes

Avoid overcooking the pasta—aim for al dente! Always taste your dish before serving to adjust seasoning.
