- 8 oz pasta (penne works best)
- 1 lb chicken breast, sliced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 cup heavy cream
- 1 cup bell peppers, sliced
- 1 cup onion, sliced
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Boil water in a large pot, add salt, and cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced chicken and sprinkle with Cajun seasoning. Cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add bell peppers and onion. Sauté until softened, about 4-5 minutes.
- Slowly stir in heavy cream, then return chicken to skillet and mix thoroughly.
- Toss in the cooked pasta and stir until well-coated in the creamy sauce.
- Taste and season with salt and pepper as necessary.
- Plate the pasta and garnish with Parmesan cheese on top.
