A comforting and flavorful twist on classic sloppy joes using Cajun-spiced chicken.
Ingredients

- 1 pound (≈450 g) ground chicken
- 1 medium onion, chopped
- 1 medium bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning (adjust to taste)
- 1 (14.5 oz) can diced tomatoes with green chilies
- 4 hamburger buns
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: 1 tablespoon tomato paste for a thicker, richer sauce
- Optional: 1 teaspoon smoked paprika for extra smokiness
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add the chopped onion, bell pepper, and minced garlic. Cook until softened and fragrant, about 4–5 minutes.
- Add the ground chicken, breaking it apart and cooking until no longer pink and lightly browned, about 5–7 minutes.
- Stir in the Cajun seasoning and the diced tomatoes with green chilies. If using, add tomato paste or smoked paprika. Bring to simmer and cook for about 8–10 minutes.
- Taste and season with salt and pepper. Spoon the mixture onto hamburger buns and serve immediately.
Notes
For a thicker sauce, simmer uncovered or add tomato paste. Adjust spice level as desired.
