Description

A comforting and flavorful twist on classic sloppy joes using Cajun-spiced chicken.


Ingredients

  • 1 pound (≈450 g) ground chicken
  • 1 medium onion, chopped
  • 1 medium bell pepper (any color), chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning (adjust to taste)
  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 4 hamburger buns
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: 1 tablespoon tomato paste for a thicker, richer sauce
  • Optional: 1 teaspoon smoked paprika for extra smokiness

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  2. Add the chopped onion, bell pepper, and minced garlic. Cook until softened and fragrant, about 4–5 minutes.
  3. Add the ground chicken, breaking it apart and cooking until no longer pink and lightly browned, about 5–7 minutes.
  4. Stir in the Cajun seasoning and the diced tomatoes with green chilies. If using, add tomato paste or smoked paprika. Bring to simmer and cook for about 8–10 minutes.
  5. Taste and season with salt and pepper. Spoon the mixture onto hamburger buns and serve immediately.

Notes

For a thicker sauce, simmer uncovered or add tomato paste. Adjust spice level as desired.
