- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Corn tortillas
- Toppings: avocado, cilantro, lime, salsa
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, toss cauliflower florets with olive oil, cumin, chili powder, salt, and pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until tender and golden.
- Warm the corn tortillas in a skillet or microwave until pliable.
- Fill each tortilla with roasted cauliflower and top with avocado, cilantro, lime juice, and salsa.
- Serve immediately.
Notes
For extra crunch, top tacos with shredded cabbage. They are best enjoyed fresh but can be stored in the fridge for up to 3 days.
