Cauliflower Tacos


Description

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn tortillas
  • Toppings: avocado, cilantro, lime, salsa

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss cauliflower florets with olive oil, cumin, chili powder, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until tender and golden.
  4. Warm the corn tortillas in a skillet or microwave until pliable.
  5. Fill each tortilla with roasted cauliflower and top with avocado, cilantro, lime juice, and salsa.
  6. Serve immediately.

Notes

For extra crunch, top tacos with shredded cabbage. They are best enjoyed fresh but can be stored in the fridge for up to 3 days.
