Cheesy Garlic Zucchini Steak

Ingredients

  • 2 medium zucchinis
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Slice the zucchinis lengthwise into thick steaks (about ½ inch thick).
  3. In a mixing bowl, whisk together the olive oil, minced garlic, salt, and pepper.
  4. Brush the oil-garlic mixture over both sides of each zucchini steak.
  5. Place the zucchini steaks on the grill grates or a baking sheet lined with parchment paper.
  6. Grill for about 5-7 minutes on each side until the zucchini is tender and has nice grill marks.
  7. During the last few minutes of cooking, sprinkle shredded cheese generously over the zucchini and close the grill lid or place in the oven until melted (about 2-3 minutes).
  8. Remove from heat, garnish with chopped parsley if desired, and serve hot.

Notes

These zucchini steaks are best enjoyed fresh, but leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
