- 2 cups cooked chicken, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups shredded cheese (cheddar or Mexican blend)
- Tortilla chips or tortillas for layering
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, sliced bell pepper, sliced onion, black beans, corn, salsa, chili powder, and cumin. Mix well.
- In a greased baking dish, layer half of the tortilla chips or tortillas, then half of the chicken mixture, and half of the cheese. Repeat the layers.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool slightly before serving. Enjoy!
Notes
For the best flavor, use leftover rotisserie chicken. Experiment with spices for a personal touch.
