Ingredients

  • 2 cups cooked chicken, shredded
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Tortilla chips or tortillas for layering

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, sliced bell pepper, sliced onion, black beans, corn, salsa, chili powder, and cumin. Mix well.
  3. In a greased baking dish, layer half of the tortilla chips or tortillas, then half of the chicken mixture, and half of the cheese. Repeat the layers.
  4. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  5. Let it cool slightly before serving. Enjoy!

Notes

For the best flavor, use leftover rotisserie chicken. Experiment with spices for a personal touch.
