- 3–4 boneless, skinless chicken breasts, sliced
- 8 oz Lo Mein noodles (fresh or dried)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
- Optional: Sliced mushrooms, broccoli florets, snap peas, freshly grated ginger
Instructions
- Gather all ingredients and prepare the vegetables by slicing them into bite-sized pieces.
- Cook the lo mein noodles according to package instructions until al dente, then drain and set aside.
- Heat a large skillet or wok over medium-high heat and add sesame oil.
- Add the sliced chicken, sautéing until golden brown and fully cooked, approximately 6-8 minutes. Remove the chicken from the skillet.
- In the same pan, stir-fry the bell peppers, carrots, and green onions for 3-4 minutes, until tender yet crisp.
- Return the cooked chicken to the skillet, then add lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well combined.
- Serve hot with extra soy sauce if desired.
Notes
Avoid overmixing; you want the ingredients to be well combined but the vegetables to retain their crunch. Best served hot.
