Chicken Lo Mein


Description

Ingredients

  • 34 boneless, skinless chicken breasts, thinly sliced
  • 8 oz. lo mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced

Instructions

  1. Gather all ingredients.
  2. Cook the lo mein noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet or wok, heat sesame oil over medium-high heat.
  4. Add the sliced chicken to the skillet, cooking until golden brown and fully cooked, approximately 6-8 minutes. Remove from the skillet and set aside.
  5. In the same skillet, add the sliced bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.
  6. Return the cooked chicken to the skillet, then add the lo mein noodles, soy sauce, minced garlic, and any other spices you prefer. Toss everything together until well mixed.
  7. Serve hot, garnished with extra green onions or soy sauce as desired.

Notes

Avoid overcooking the vegetables to retain their crunch. Taste and adjust soy sauce before serving.
