Ingredients

- 3–4 boneless, skinless chicken breasts, thinly sliced
- 8 oz. lo mein noodles (fresh or dried)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
Instructions
- Gather all ingredients.
- Cook the lo mein noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet or wok, heat sesame oil over medium-high heat.
- Add the sliced chicken to the skillet, cooking until golden brown and fully cooked, approximately 6-8 minutes. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.
- Return the cooked chicken to the skillet, then add the lo mein noodles, soy sauce, minced garlic, and any other spices you prefer. Toss everything together until well mixed.
- Serve hot, garnished with extra green onions or soy sauce as desired.
Notes
Avoid overcooking the vegetables to retain their crunch. Taste and adjust soy sauce before serving.
