- 3–4 boneless, skinless chicken breasts, thinly sliced
- 8 oz. Lo Mein noodles (fresh or dried)
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh garlic, minced
Instructions
- Gather ingredients and chop vegetables into bite-sized pieces.
- Prepare Lo Mein noodles according to package instructions until al dente, then drain and set aside.
- In a large skillet or wok, heat sesame oil over medium-high heat. Add sliced chicken and sauté until golden brown and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, stir-fry bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
- Return the cooked chicken to the skillet. Add drained noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well mixed and heated through.
- Serve hot, garnished with additional green onions or extra soy sauce if desired.
Notes
Avoid overmixing the noodles to keep them from breaking.
