Ingredients

  • 34 boneless, skinless chicken breasts, thinly sliced
  • 8 oz. Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh garlic, minced

Instructions

  1. Gather ingredients and chop vegetables into bite-sized pieces.
  2. Prepare Lo Mein noodles according to package instructions until al dente, then drain and set aside.
  3. In a large skillet or wok, heat sesame oil over medium-high heat. Add sliced chicken and sauté until golden brown and cooked through, about 6-8 minutes. Remove chicken and set aside.
  4. In the same skillet, stir-fry bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
  5. Return the cooked chicken to the skillet. Add drained noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well mixed and heated through.
  6. Serve hot, garnished with additional green onions or extra soy sauce if desired.

Notes

Avoid overmixing the noodles to keep them from breaking.
