- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Juice of 1 lime
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- ½ teaspoon salt
- 8 corn tortillas
- ½ cup chopped onion
- ½ cup chopped cilantro
- Lime wedges (for serving)
Instructions
- In a bowl, combine olive oil, lime juice, garlic powder, cumin, and salt. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.
- Preheat a grill or stovetop grill pan over medium-high heat.
- Place the marinated chicken on the grill. Cook for about 6-8 minutes per side until thoroughly cooked and has nice grill marks.
- Remove the chicken from the grill and let it rest for a few minutes before slicing into strips.
- Toss corn tortillas on the grill for about 30 seconds each or until warm and slightly toasted.
- Lay slices of grilled chicken into each tortilla and top with chopped onion and cilantro. Finish with a squeeze of lime.
Notes
For best results, allow the chicken to rest after grilling to retain juices. Consider adding sliced jalapeños or radishes for extra crunch.
