  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • 8 corn tortillas
  • ½ cup chopped onion
  • ½ cup chopped cilantro
  • Lime wedges (for serving)

Instructions

  1. In a bowl, combine olive oil, lime juice, garlic powder, cumin, and salt. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.
  2. Preheat a grill or stovetop grill pan over medium-high heat.
  3. Place the marinated chicken on the grill. Cook for about 6-8 minutes per side until thoroughly cooked and has nice grill marks.
  4. Remove the chicken from the grill and let it rest for a few minutes before slicing into strips.
  5. Toss corn tortillas on the grill for about 30 seconds each or until warm and slightly toasted.
  6. Lay slices of grilled chicken into each tortilla and top with chopped onion and cilantro. Finish with a squeeze of lime.

Notes

For best results, allow the chicken to rest after grilling to retain juices. Consider adding sliced jalapeños or radishes for extra crunch.
