- 2 cups cooked chicken, shredded
- 1 cup tortilla chips, crushed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, and season with salt and pepper.
- In a greased baking dish, layer half of the crushed tortilla chips on the bottom.
- Spread the chicken mixture evenly over the first layer of chips.
- Sprinkle the remaining crushed tortilla chips on top.
- Generously sprinkle shredded cheese over the top layer of chips.
- Place the dish in the preheated oven and bake for 20-25 minutes until the cheese is melted and bubbly.
- If desired, garnish with fresh cilantro before serving hot.
Notes
For a spicier kick, consider adding jalapeños or diced green chilies to the chicken mixture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
