Chicken Tortilla Dump Dinner

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup tortilla chips, crushed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cumin, chili powder, and season with salt and pepper.
  3. In a greased baking dish, layer half of the crushed tortilla chips on the bottom.
  4. Spread the chicken mixture evenly over the first layer of chips.
  5. Sprinkle the remaining crushed tortilla chips on top.
  6. Generously sprinkle shredded cheese over the top layer of chips.
  7. Place the dish in the preheated oven and bake for 20-25 minutes until the cheese is melted and bubbly.
  8. If desired, garnish with fresh cilantro before serving hot.

Notes

For a spicier kick, consider adding jalapeños or diced green chilies to the chicken mixture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
