- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1/2 cup unsweetened shredded coconut
- 1/2 cup unsalted butter, softened (about 113 g)
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a bowl, mix together the flour, cocoa powder, baking powder, and salt. Whisk to combine.
- In another bowl, beat together the butter, granulated sugar, and brown sugar until creamy (about 2-3 minutes)
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the shredded coconut.
- Drop spoonfuls of the cookie dough onto the lined baking sheet, spacing them ~2 inches apart.
- Bake for 10-12 minutes, or until the edges are firm and the centers are set but still soft.
- Allow to cool on the baking sheet for 3-5 minutes before transferring to a wire rack to cool completely.
