- 1 cup (240 ml) heavy cream
- 1/2 cup (≈86 g) chocolate chips (dark or semi-sweet)
- 3 large eggs
- 1/4 cup (50 g) granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium saucepan over very low heat, melt the chocolate chips, stirring constantly until smooth. Remove from heat and let it cool slightly.
- In a clean, chilled bowl, whip the heavy cream to soft peaks. Set aside in the refrigerator.
- In another large bowl, whisk together the eggs, sugar, vanilla extract, and salt until pale and slightly fluffy.
- Gradually fold the melted chocolate into the egg mixture until combined, being careful to retain air.
- Carefully fold in the whipped cream until fully incorporated and the mixture is light and homogeneous.
- Use immediately as a filling or refrigerate for 1–2 hours for a firmer texture before using.
Notes
This mousse filling is rich and contains moderate sugar. Consider using pasteurized eggs or a cooked sabayon for safety.
