Chocolate Peanut Butter Rice Krispie Cups

Ingredients

  • 2 cups Rice Krispies cereal
  • 1 cup (about 170 g) chocolate chips, plus extra for drizzling if desired
  • 1 cup (about 250 g) peanut butter (creamy or chunky)
  • 1/4 cup (56 g) butter
  • 1/4 cup (about 30 g) powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a saucepan, melt butter and peanut butter together over low heat. Stir until smooth.
  2. Remove from heat and stir in powdered sugar and vanilla extract.
  3. Fold in Rice Krispies until well coated.
  4. Line a muffin tin with cupcake liners and fill each liner with the mixture, pressing down gently.
  5. Melt chocolate chips in the microwave (in 20–30 second bursts, stirring between) or using a double boiler.
  6. Spoon melted chocolate over the Rice Krispie mixture in each cup.
  7. Refrigerate until set, about 30 minutes.

Notes

Ensure to keep the stovetop on low while melting the peanut butter and butter. Press the mixture firmly but not crushed into the liners for best results.
