Ingredients

  • 3 cups Rice Krispies cereal
  • 1 cup semisweet chocolate chips
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsalted butter

Instructions

  1. Line a 12-cup muffin tin with paper or silicone liners; set aside.
  2. In a small saucepan over low heat, combine the butter and peanut butter. Stir constantly until fully melted and smooth (about 2–3 minutes).
  3. Remove the saucepan from heat. Stir in the powdered sugar and vanilla extract until smooth.
  4. Pour the peanut butter mixture over the Rice Krispies in a large mixing bowl. Stir quickly to coat.
  5. Spoon the mixture into the prepared muffin liners, pressing gently to form cup shapes.
  6. Melt the chocolate chips in a microwave-safe bowl in 20–30 second bursts until smooth.
  7. Drizzle or spoon the melted chocolate over each Rice Krispie cup.
  8. Refrigerate for at least 30 minutes until the chocolate sets. Remove from liners and serve.

Notes

Work quickly when coating the cereal to retain crunch. Store in an airtight container at room temperature for up to 2 days or in the fridge for up to 7 days.
