- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh strawberries, pureed
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of a springform pan.
- In a large bowl, beat the softened cream cheese with 1 cup sugar and vanilla extract until smooth.
- Incorporate eggs one at a time, mixing well after each addition.
- Pour half of the cream cheese mixture over the crust and swirl in half of the strawberry puree. Pour the remaining cream cheese mixture and top with the rest of the strawberry puree and chocolate chips.
- Bake for 50-60 minutes until the center is set and slightly wobbly.
- Allow to cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
Best served chilled; consider serving with whipped cream.
